Meet Me On Mondays


Questions:

1.  What do you put on your hot dog?

      I have a GREAT!!! recipe for Avocado Dog (YUMMY YUM just with the tummy ordered) here's the recipe.
8 hot dogs
8 hot dog buns
2 medium ripe tomatoes, seeded and chopped into 1/4-inch pieces
2 large avocados, halved, pitted, peeled and chopped
Juice of 2 limes
Ketchup, mustard and mayonnaise [optional]
Grilled or raw onions [optional]
Salt

Grill hot dogs until lightly browned.  Open hot dog buns and grill flat.

Mix tomatoes, avocados and lime juice in a small bowl.

Spread desired condiments such as ketchup, mustard and mayonnaise on the hot dog buns.

Place hot dogs on the dressed buns and top with avocado mixture.  Add grilled or raw onions.  Sprinkle with a little salt.

     No, to busy blogging.

3.  What is your favorite vegetable? 

     That's a hard one I LOVE almost all veggies, but peas would have to be my first, then Asparagus and third but not the last green beans. I have many other favorites but, those would have to be my top three.

4.  Do you color your hair?

     No, use to when I was younger. Now I just let all the gray hang out and LIKE it that way.

5.  What is your favorite brand of clothing?

     Comfy!!! I know that's not a brand, but if it's not comfy why wear it. Also I hate spending lots of money on clothes.

APPLE CARROT CAKE with GOAT CHEESE FROSTING




2 cups flour
1 - 1/2 cups sugar
2 - 1/4 teaspoons baking soda
1 - 1/2 teaspoons baking powder
1 - 1/2 teaspoons cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon ginger
2 teaspoon unsweetened cocoa powder
1/4 teaspoon salt
1 cup oil
4 large eggs plus 1 egg yolk, lightly beaten
1 - 1/2 cups packed coarsely grated carrots (about 3 medium)
1 - 1/2 cups packed coarsely grated tart apples, such as Granny Smith (about 2 medium)
1 cup coarsely chopped walnuts, plus more for garnish
10 ounces fresh, mild chevre (goat cheese) at room temperature
10 ounces cream cheese, at room temperature
2 tablespoons unsalted butter, at room temperature
1 teaspoon vanilla extract
2 cups powdered sugar

1.  Preheat oven to 350.  Grease three 9-in round cake pans and set aside.  In a large bowl, combine flour, sugar. baking soda, baking powder, spices, cocoa and salt.  Whisk to combine, then stir in oil and eggs.  Stir in carrote, apples and 1 cup walnuts.

2.  Divide batter among pans and bake until cakes pull away from pan sides and a cake tester inserted in each center comes out clean, 25 minutes.  Transfer cakes to cooling racks and let cool 10 minutes.  Turn out onto racks and let cool completely.

3.  Beat goat cheese, cream cheese, butter and vanilla until smooth and fluffly about 3 minutes.  Gradually add powdered sugar and mix until combined.

4.  Once cakes are cool, arrange first layer on a large plate or platter.  Spread some frosting over it, then top with second layer.  Frost second layer and top with the third.  Generously frost top and sides of cake with remaining frosting.  Chill cake at least 1 hour. Before serving, press walnuts lightly into sides of cake.

Yield: Makes 10 servings

Meet Me On Mondays


Questions:

1.  What is your favorite kind of fudge?

     My favorite fudge is Rocky Road with lots of PECANS!!!

2.  Is there snow outside your window?

     No snow, I live in Albuquerque, NM and if it snows it usually melts in a day or two. 

3.  What is your favorite meal of the day? 

     Dinner is my favorite meal of the day, because it's the only meal I can eat with my hubby.  We can eat and talk about are day with each other. 

4.  Do you text on your cell phone?

     Yes, I text all the time. I love sending little love notes to my hubby. Also, send notes to my grand-daughters.

5.  Waffles or pancakes?

    Pancakes, LOVE pancakes and with Hot Apple Topping!!! Here's the recipe I use:


Apple Topping


3 tablespoons butter
4 apples, peeled, cored and sliced
2/3 cup packed brown sugar
1/8 teaspoon cinnamon

Heat 1 tablespoon butter in a large skillet over medium heat.
If you're using nut press saturated bread slices into chopped nuts to coat.
Cook 2 -3 slices at a time until golden brown on each side, adding butter to the skillet as needed.

Serve hot with apple topping.

CHILEAN AVOCADO DOGS

8 hot dogs
8 hot dog buns

My Answers!


1.  Do you like your ice cream in a dish, waffle cone, pretzel cone, sugar cone or cake cone?


     Well, if it's from Dairy Queen it's a cake come, but if it's from Baskin Robbins it's a sugar cone.


2.  Do you read the newspaper daily?

     I really don't read the newspaper, but I do look at the ads in the Sunday's paper. I LOVE a bargain!!!


3.  Marinara or meat sauce? 
     
     I love pasta with meat sauce.


4.  Last time you cried?


     WOW!!! Last week, sometimes I can be a BIG!!! cry baby. My husband says that since I have started menopause I cry at a drop of a hat. 


5.  What word/phrase do you find really annoying?


    I hate when people say "Do you know what I mean" This is so annoying!!!

MEDITERRANEAN ASPARAGUS FRITTATA

1 pound Fresh asparagus, trimmed
Cooking spray
1 tablespoon olive oil
1 cup sliced mushrooms
1/2 cup diced red pepper
1/2 teaspoon salt
1/2 teaspoon red pepper flakes
1/2 cup shredded fresh basil leaves
7 eggs, beaten
1/2 cup cold water
3/4 cup shredded Parmesan cheese, divided

Preheat oven to 400 F

Cut asparagus tips; microwave on high for 1 minute, Set aside.  Cut remaining stalks into 1-inch pieces.

Coat a large ovenproof saute pan with cooking spray.  Add olive oil to the pan and heat over medium heat. Add asparagus stalks, mushrooms and bell pepper; cook for 2 to 3 minutes, or until asparagus is crisp tender.  Sprinkle with salt, red pepper flakes and basil.

Blend eggs and water; pour into pan.  Sprinkle with 1/2 Parmesan.  Arrange asparagus tips over the eggs, then sprinkle with remaining Parmesan.

Cook over heat for 8 to 10 minutes, or until almost cooked through.  Place in the oven for 5 to 10 minutes, or until puffed and golden.

Makes 6 servings

Meet Me On Mondays!!!

My Answers!

1.  Have you (only you...not a group) ever won first place in anything?

     Yes, I have many blue ribbons for baking. I love to bake my first blue ribbon was for my Biscochitos. These are an anise cookie. Here in New Mexico we make them is Christmas and weddings.

2.  Are your toes always painted (sorry guys...this question for girls only)?
     
     Painted, I treat myself twice a month to a pedicure. 

3.  What color eyes do you have? 
     
     My eyes are BROWN. 


4.  Look to your left....what do you see?
     
     I see outside my bedroom window. Today it's cloudy and cold, glad I'm inside where it's warm.

5.  Soft cookies or crunchy cookies?
     
     Really any kind of cookies. I have a sweet tooth. My favorite cookie is Peanut Butter.

MIA, but back with a YUMMY!!! recipe to share with a LOVED ONE. BACON-WRAPPED SHRIMP with SPICY ORANGE SAUCE



BACON-WRAPPED SHRIMP with SPICY ORANGE SAUCE

8 large shrimp, shelled and deveined
3 - 4 slices bacon, cut into 3 - to - 3 inch sections

SAUCE:

3 Tablespoons orange marmalade
1 jalapeno, stemmed and chopped
2 green onions, white and green parts, chopped
2 Tablespoons chopped fresh cilantro
2 Tablespoons extra virgin olive oil
Salt and pepper to taste

Preheat the broiler

To prepare Spicy Orange Sauce, in bowl stir together marmalade, jalapeno, green onion, cilantro, olive oil, salt and pepper.

Wrap each shrimp in a section of bacon and secure with toothpick.

Place shrimp on a baking sheet and broil, turning once, until bacon is crisp and shrimp are cooked through, 2 -3 minutes each side.


Arrange on a platter and serve immediately with Spicy Orange Sauce or your favorite dipping sauce.

Makes 2 servings.

I know it's been awhile since I've posted a recipe. Sorry to all who followers. The last time I posted was in September. Really no reason for not posting, just needed a rest. In May of 2009 I had back surgery, then got a blood clot in my leg in August. The rest of 2009 and into 2010 was busy going to doctors. In the summer of 2010 I tore a tendon in my ankle, but the doctor won't but me in a cast due to my clotting problems. Had to wear a brace and still wearing the brace. Oh well, thank God something could be done so I could walk without pain. The rest of 2010 was doctor visit after doctor visit. Two weeks before Christmas had to go to the ER with Cellulitis and guess what they put me in the hospital. Well, it's a New Year and hopefully a better one for my family and me. I tried of being sick, but after resting and lots of prayer I know this year will be a GREAT!!! year.
