Meet Me On Mondays


Questions: 

1.  What do you put on your hot dog?

1.  What do you put on your hot dog?

      I have a GREAT!!! recipe for Avocado Dog (YUMMY YUM just with the tummy ordered) here's the recipe.
8 hot dogs
8 hot dog buns
2 medium ripe tomatoes, seeded and chopped into 1/4-inch pieces
2 large avocados, halved, pitted, peeled and chopped
Juice of 2 limes
Ketchup, mustard and mayonnaise [optional]
Grilled or raw onions [optional]
Salt

Grill hot dogs until lightly browned.  Open hot dog buns and grill flat.

Mix tomatoes, avocados and lime juice in a small bowl.

Spread desired condiments such as ketchup, mustard and mayonnaise on the hot dog buns.

Place hot dogs on the dressed buns and top with avocado mixture.  Add grilled or raw onions.  Sprinkle with a little salt.

2.  Do you play Sudoku?

     No, to busy blogging.

3.  What is your favorite vegetable? 

     That's a hard one I LOVE almost all veggies, but peas would have to be my first, then Asparagus and third but not the last green beans. I have many other favorites but, those would have to be my top three.

4.  Do you color your hair?

     No, use to when I was younger. Now I just let all the gray hang out and LIKE it that way.

5.  What is your favorite brand of clothing?

     Comfy!!! I know that's not a brand, but if it's not comfy why wear it. Also I hate spending lots of money on clothes.

APPLE CARROT CAKE with GOAT CHEESE FROSTING




2 cups flour
1 - 1/2 cups sugar
2 - 1/4 teaspoons baking soda
1 - 1/2 teaspoons baking powder
1 - 1/2 teaspoons cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon ginger
2 teaspoon unsweetened cocoa powder
1/4 teaspoon salt
1 cup oil
4 large eggs plus 1 egg yolk, lightly beaten
1 - 1/2 cups packed coarsely grated carrots (about 3 medium)
1 - 1/2 cups packed coarsely grated tart apples, such as Granny Smith (about 2 medium)
1 cup coarsely chopped walnuts, plus more for garnish
10 ounces fresh, mild chevre (goat cheese) at room temperature
10 ounces cream cheese, at room temperature
2 tablespoons unsalted butter, at room temperature
1 teaspoon vanilla extract
2 cups powdered sugar

1.  Preheat oven to 350.  Grease three 9-in round cake pans and set aside.  In a large bowl, combine flour, sugar. baking soda, baking powder, spices, cocoa and salt.  Whisk to combine, then stir in oil and eggs.  Stir in carrote, apples and 1 cup walnuts.

2.  Divide batter among pans and bake until cakes pull away from pan sides and a cake tester inserted in each center comes out clean, 25 minutes.  Transfer cakes to cooling racks and let cool 10 minutes.  Turn out onto racks and let cool completely.

3.  Beat goat cheese, cream cheese, butter and vanilla until smooth and fluffly about 3 minutes.  Gradually add powdered sugar and mix until combined.

4.  Once cakes are cool, arrange first layer on a large plate or platter.  Spread some frosting over it, then top with second layer.  Frost second layer and top with the third.  Generously frost top and sides of cake with remaining frosting.  Chill cake at least 1 hour. Before serving, press walnuts lightly into sides of cake.

Yield: Makes 10 servings

Meet Me On Mondays

1.  What is your favorite kind of fudge?

     My favorite fudge is Rocky Road with lots of PECANS!!!

2.  Is there snow outside your window?

     No snow, I live in Albuquerque, NM and if it snows it usually melts in a day or two. 

3.  What is your favorite meal of the day? 

     Dinner is my favorite meal of the day, because it's the only meal I can eat with my hubby.  We can eat and talk about are day with each other. 

4.  Do you text on your cell phone?

     Yes, I text all the time. I love sending little love notes to my hubby. Also, send notes to my grand-daughters.

5.  Waffles or pancakes?

    Pancakes, LOVE pancakes and with Hot Apple Topping!!! Here's the recipe I use:


Apple Topping


3 tablespoons butter
4 apples, peeled, cored and sliced
2/3 cup packed brown sugar
1/8 teaspoon cinnamon

Heat 1 tablespoon butter in a large skillet over medium heat.
If you're using nut press saturated bread slices into chopped nuts to coat.
Cook 2 -3 slices at a time until golden brown on each side, adding butter to the skillet as needed.

Serve hot with apple topping.
