1.  Crunchy or soft tacos?

     Soft tacos weather they are corn or flour tortillas.

     No, I don't scrapbook.

    Yes, I take medications twice a day. I hate going to the doctor, because they always want to add a new pill.

      My favorite sound is when I grand-daughters say I LOVE YOU!!!


5.  Where were you born?

     I was born in New Mexico, the Land of Enchantment.

SOUTHWEST CHICKEN and AVOCADO MELT

2 tablespoons vegetable oil, divided
4 Anaheim or Poblano chiles
3 boned, skinned chicken breast halves
1 teaspoons ground cumin
1/2 teaspoon cayenne
1 teaspoon salt
Lime wedges
1 avocado, peeled. pitter and sliced
1-1/2 cup shredded jack cheese

Prepare a grill for high heat (450 to 550) you can hold your hand 5 inch above cooking grate for 2 to 4 seconds.  Rub 1 tbsp, oil over chiles.  Cook chiles turning often, until skins are browned.  Put chiles in a bowl, cover and let cool.  Seed chiles and rub off skins.

Meanwhile, rub remaining oil over chicken.  Combine cumin, cayenne and salt.  Sprinkle evenly over each chicken breast.  grill chicken, turning once, until browned and cooked through, about 10 minutes.

Squeeze a little lime over chicken, then top each breast with a few avocado slices, a chile and cheese.  Grill covered, until cheese melts, about 4 minutes.

Yield: Serves 4

1.  What jewelry do you wear 24/7?

     I LOVE jewelry and wear my heart bracelet everyday 24/7, only take it off to shower.


2.  Do you twirl your spaghetti or cut it?

      I cut up my spaghetti, I hate to get the sauce all over myself.


3.  How many siblings do you have?  

     I have one sister and four brothers, I'm the oldest of the clan.

4.  Where you named after anyone?

     Not really, I know that St Gerald "Patron Saint of Motherhood," and my mom prayed to him for a safe delivery.

CHICKEN CHEESESTEAKS


If you like a bit of the southwest try these Cheesy Chicken Sandwiches with a kick from a bit of cayenne.

1/4 cup olive oil
2 boned, skinned chicken breast halves [1 lb.), sliced
1 cup sliced mushrooms
1 cup sliced onion
1 cup sliced green bell pepper
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon cayenne
2 teaspoons butter
4 French bread rolls, split
4 romaine lettuce leaves
1 cup shredded jack cheese

1.  Preheat oven to 350.  Heat oil in a large frying pan over high heat.  Add chicken cook until lightly browned, add seasoning and mushroom, stir and cook for 2 to 3 minutes.  Add onion and bell peppers continue to cook about 3 mintues.  You don't want the onions and bell peppers to be soft.

2.  Spread 1/2 tsp. butter, inside each roll and toast rolls, opened up, in oven on a baking sheet about 4 minutes.  Lay 1 lettuce leaf in each roll.  Divide dcicken mixture among rolls and top with cheese.  Serve with potato chips.

Yield: serves 4

1.  What is your favorite way to eat potatoes?
   
    My favorite way is BAKED with Lots of Butter and Sour Cream!!!

2.  What was the last package that was delivered to your house?

     The last thing to be delivered to my house was a popcorn machine. Makes yummy popcorn, just like the one you get it the movies.

3.  What is your favorite scent that you love to smell?

    I LOVE the smell of a NEW BABY!!! 

4.  Do you smoke?

     No, THANK!!! God. I have enough BAD HABITS!!!

5.  Are your parents married or divorced?

    Parents are married, but my Dad has gone to his reward.

BARBECUED CHICKEN PIZZA


You can make pizza dough from scratch, but pre-baked pizza crusts are an easy and fast shortcut.

1 pound boned, skinned chicken breasts
1/3 cup prepared barbecue sauce
salt and pepper to taste
4 slices bacon, cut into 1-inch pieces
2 baked pizza crusts (7 to 8 in., 5 oz. each)
1/4 cup cream cheese (2 oz.)
1/4 cup canned diced green chiles
1/2 cup shredded jack cheese
1/4 to 1/2 teaspoons hot chile flakes (optional)

Rinse chicken and pat dry. Place in an 8-inch baking pan and coat with about 2 tablespoons barbecue sauce.  Sprinkle with salt and pepper.  Bake in a 350  oven until no longer pink at the center of the thickest part (cut to test), about 20 minutes.  Let stand until cook enough to handle, the tear into bite-size chunks.  In a small bowl, mix with remaining barbecue sauce.

Meanwhile, in a 10 to 12 inch frying pan over high heat, stir bacon until browned and crisp, about 5 minutes.  Witha slotted spoon, transfer bacon to paper towels to drain.

Place pizza crusts on a 12 by 15 inch baking sheet.  Spread each with about 2 tablespoons cream cheese.  Spoon chicken in sauce evenly over both crusts; top with bacon, green chiles, jack cheese and hot chili flakes.

Bake pizzas in a 400 oven until cheese is browned and bubbling, 15 to 20 minutes.  Transfer to a broad and cut into wedges.

Yield: makes two 8 inch pizzas; 2 or 3 servings
