" ASIAN BEEF and NOODLES "

1 tablespoon vegetable oil
1 pound lean ground beef
1 small green bell pepper, seeded and thinly sliced
4 scallions, trimmed and thinly sliced
2 tablespoons ginger, finely chopped
1 clove garlic, finely chopped
1/4 teaspoon red pepper flakes
3 tablespoons stir - fry sauce
3 tablespoons lime juice
8 ounces thin spaghetti

Bring a large pot of lightly salted water to a boil

In a large skillet, heat oil over medium-high heat. Add beef to skillet and cook for 6 minutes or until no longer pink.

Add green pepper, scallions, ginger, garlic and red pepper flakes to skillet, cook for minutes, stirring occasionally. Turn off heat and stir in stir fry sauce and lime juice.

Well beef is cooking prepare spaghetti following package directions. Drain and add to skillet with beef mixture. Toss to combine.

Makes 4 serving.

  12. I'm putting this on the menus for next week. It just looks yummy to me, and not just because I had to skip lunch today LOL! Really...the ginger and lime juice really speak to me. Seems like it will be a perfect quick meal for a hot summer day. Thanks.
